Protein Energy Cookies

So I need to be more organized and post at the same time every week but since I'm not that together, here I am trying to post everything at once!:) I thought it was about time to put a sweet snack up here and what's better than protein energy cookies?! I've made several versions of these delightful treats and this recipe is my favorite! So naturally friends, only the best recipes for you!

 

 

Protein Energy Cookies

Prep time: 20 minutes. Cooking time:7-10 minutes. Yields: 24

Ingredients:

2/3 cup organic brown sugar

1 cup of organic chocolate chips

1 smashed ripe banana

1/2 cup organic unsalted peanut butter

1 cup organic unsweetened applesauce

2/3 cup chia seeds

1-2 tablespoons of milled flax seed

2 cups of all natural rolled oats (Trader Joes are gluten free!)

1 tsp. baking soda

1 tsp vanilla

 

Preheat oven to 350

Cream sugar,banana, peanut butter, and applesauce. Mix flax seed with 1/4 cup water and add to mixture. Stir in vanilla and chia seeds. Add rolled oats to mixture and let stand 10 minutes or til oats are puffed up. Gently fold in chocolate chips. Spoon onto greased cookie sheet and bake for 7-10 minutes or until golden brown.

 

 

Enjoy these yummy treats as snacks, dessert, or breakfast! You can also add dried cranberries, almond slices, or your favorite add in!
