Like the rest of the country during October, I can’t get enough pumpkin spice! My boys like pancakes, French toast or anything you can smother in maple syrup, so I decided to indulge my love of pumpkin and try a pumpkin spice French toast. Let me tell you, after one bite my tongue sang, “Ooh heaven is a place on earth!” Well maybe not exactly, but you get the point. With a little maple syrup-this toast will make any breakfast divine!
Prep time: 20 minutes servings: 8-10
1 cup of canned pumpkin
1/2 cup of sugar
1/4 cup of cream (I used soy cream)
1 cup of almond milk or regular milk
2 tbs. of pumpkin pie spice
1 tsp. cinnamon
1 tbs. of vanilla
2 loaves of French bread
Place all the ingredients in a blender or food processor and purée til smooth. Pour into a bowl and admire the pumpkiny goodness!
Slice the French bread into one and half inch pieces. Heat a pan or griddle to a medium high heat and spray with oil-I used coconut oil.
Quickly dip one slice at a time, coating both sides of the French bread in the pumpkin cream. Place on the hot griddle and cook 2-3 minutes on each side or until each side is a golden brown.
