Did I say pumpkin grits? Why yes! Yes I did! Pumpkin and GOUDA! This salad is creamy, crunchy, juicy-amazing. I’m salivating just thinking about it! This is a 20 minute meal that comes in under 300 calories! I can’t get over it and it takes my love for pumpkin to a whole new level.

3/4 cup canned pumpkin
3/4 cup of quick grits
1 cup of water
2 slices of smoked Gouda cheese
4 cups of fresh arugula
2 Roma tomatoes
Salt and pepper
Bring one cup of water to boil in medium saucepan. Add in grits and boil for 5 minutes, stirring frequently. Turn heat to low and cover. Cook until water is absorbed and grits thicken. Add in pumpkin and cheese. Stir until fully blended. Add salt and pepper to taste. It should have a delightful creamy, oranginess to it when all is mixed in well.
