Cheesy Lentils and Corn

I was looking for an easy, creamy, alternative to soup and lentils fit the bill perfectly! This dish fits delightfully into a fall lunch menu and can be ready in 20 minutes or less! It’s filling, low calorie and makes great toddler food too!

Cheesy Lentils and Corn

Prep time: 20 mins. Calories: 228 per serving
Servings: 4

Ingredients:

1 cup of split red lentils
3 cups of water
1 11oz. Can of corn or 1 and 1/2 cups
2 oz. Muenster cheese
1 tsp. of whole grain spicy brown mustard
1/2 tsp. of garlic powder
Salt and pepper to taste

Pour water and lentils into a medium sauce pan. Bring to a medium boil and cook until lentils are soft and fluffy. Drain water. Add corn, cheese, and spicy brown mustard.
Add spices and mix well. When cheese is fully melted, ladle lentils into bowls and enjoy hot!!
