Gluten-Free Garlic Mushroom Pasta and Greens

This recipe was a complete accident. A delightful, creamy, garlicky, mushroomy accident! And boy was my hubby happy about my mistake! I was attempting to do something with some leftover pumpkin seeds that ended up chewy and frankly-not tasty! That left me in a pinch with lunch needing to be ready at that moment! I had already cooked my brown rice pasta and I had mushrooms on hand, so I switched it up and in 10 minutes time had this yummy, filling, nutritiously naughty pasta and greens! My husband happens to love a good white sauce, so he was in heaven. Quite honestly, I was too! Here’s to happy mistakes!

Gluten Free Garlic Mushroom Pasta and Greens

Prep time: 25 mins. Calories: 340 per serving
Servings: 4

1/2 lb. Gluten free brown rice pasta
3/4 cup sun dried tomatoes
6 cups raw baby spinach
1/2 cup shaved Parmesan, Romano and Asiago cheese
1 1/2 cups of whole baby Bella mushrooms
1/3 cup cashews
2 green onions
1 cup almond milk
1 tsp. cornstarch
2 tsp. garlic powder
1 tsp. crushed dried basil
Salt and pepper to taste

Boil 4 cups of water and cook pasta until tender.
While the pasta is cooking, dice onions and brown in lightly greased pan along with the cashews at medium high heat. Pour half a cup if almond milk over the browned onions and nuts and turn heat to medium low. Slice mushrooms in half and add to sauce pan.

In a small bowl, whisk corn starch and the other half cup of almond milk. Add to pan stirring well. Sprinkle in cheese, seasonings and sun dried tomatoes. Stir until the sauce begins to thicken. This sauce doesn’t get incredibly thick but since you are serving it over greens, it’s nice to have a little extra juiciness.

Drain extra water from pasta and pour mushroom sauce over top. Gently mix until the pasta is coated. Remember, the sauce may be a little runny and that’s okay!

Arrange 1 1/2 cups of raw spinach on four plates. Spoon pasta over top. Sprinkle with a little shaved cheese and finish with cracked black pepper.
