This salad is dressing free, gluten free, dairy free, and awesome! My husband scarfed this up and begged for more! However, I will warn you that it’s not for the light dill lover, it’s for the pickle craving, dill flavor loving souls out there that can never get too much of crunchy cucumbers-pickled or not! Chop, pour, stir and turn this out in 7 minutes flat and enjoy a light flavorful lunch at 64 calories a serving!!!!
Light Cucumber Dill Salad

Calories: 64 per serving
1 hothouse English cucumber
2 green onions
3 large kosher deli dill pickle wedges
4-5 marinated artichoke hearts
6 cups of kale and spinach salad mix
Salt and pepper to taste
1/2 cup of pickle juice
Chop cucumber, onions, pickles, and artichokes into bite size pieces.
Stir together with greens in a large salad bowl. Drizzle with pickle juice and sprinkle with sea salt and cracked black pepper. Toss well until greens are coated with pickle juice. Serve immediately and enjoy all the pickle flavor with 64 calories a serving!!!
