Don’t be scared by the title of this soup-it is yummy!!! It meets all the requirements of the strictest of diets and still tantalizes the tongue with creamy goodness! I’m certain you could offer this soup with no explanation and please dairy lovers everywhere!
Vegan Gluten-Free Broccoli Cheddar Soup(With Power Greens)
Prep time: 30 mins. Servings: 4
2 cups vegetable broth
1 cup water
16 oz. of broccoli fresh or frozen
3 green onions
2 cups of spinach and kale
1 heaping cup of Daiya vegan cheddar cheese shreds
1 1/2 cups almond milk
1 1/2 tbs. corn starch
1 tbs. garlic powder
Salt and pepper to taste
In a large pot combine water and broth. Add in broccoli, greens, and onions. Cook on high until broccoli is soft.
Pour all but about one cup of veggies and broth into a blender and purée with 1 cup of almond milk. I left one cup not blended to give the soup some nice chunky pieces.
Whisk corn starch with the remaining 1/2 cup of almond milk and add it to the pot. Pour the puréed soup back in as well and bring to a boil. Add cheese, garlic powder, salt and pepper and stir often until thickened.
Top with cracked black pepper and serve hot!
