Candied Walnuts

We needed a sweet and crunchy treat to add to our vegan dinner! So what’s better than roasted nuts? I recently read about the enormous benefits of omega-7 fats and found that walnuts are an incredible source of those good fats! It seemed like a natural choice then to combine a healthy source of nutrition with my favorite thing-sugar!!

Candied Walnuts

Prep time: 45-60 mins. Servings: 10

3 cups of shelled walnuts
1/2 cup of Earth Balance
1 cup of organic brown sugar
4 tbs. of cinnamon

Melt Earth Balance and pour in a medium sized bowl. Pour walnuts over Earth Balance and stir until well coated. In a separate bowl mix sugar and cinnamon. Spread nuts evenly onto a foiled and greased baking sheet. Bake at 350 for 30 minutes or until sugar begins to darken. Set aside and let cool. Sprinkle with a little brown sugar if desired and serve at room temperature.
