This recipe is adapted from my Vegan Gluten-Free Broccoli Cheddar Soup( With Power Greens) . I added some lentils, tried out a new vegan cheese and this soup delighted my whole family! Vegan and gluten free, but oh so yummy!!
Vegan Broccoli and Cheddar Soup (With Lentils)
Prep time: 45 mins. Servings: 6-8
4 cups water
3 cups vegetable broth
1/2 cup lentils
2 cups kale
2 cups raw broccoli
2 cups almond milk
1/2 cup cubed vegan cheddar cheese
2 tbs cornstarch
1 tsp. seasoning salt
Sea Salt and freshly ground pepper
Bring water and broth to a low boil. Add lentils and chopped scallions. Finely chop kale into small pieces and add to pot. Chop up raw broccoli into bite sized pieces and add to pot as well.
When the broccoli is tender, whisk the corn starch and almond milk in a separate dish and add to pot. Add cubed cheese stirring often.
This is the cheese I used and it had a delightful aged cheddar flavor! I loved it! As the cheese begins to melt, add seasoning salt and sea salt and pepper. Serve warm and enjoy!
