This recipe is, as the name suggests, gluten free-but it’s also vegan and right around 100 calories per cookie! These are just sweet enough, full of chocolate and peanut butter goodness and have just the right amount of gooey softness. In fact, I’m craving them right now as I type this! I may have to go make some after I finish this post….
Ooey Gooey Gluten-Free Cookies
Prep time: 30 mins. Servings: 18
Calories: 111 per serving
2 cups almond flour
1 tbs Earth Balance
3 tbs. organic unsalted peanut butter
1/2 tsp. vanilla
1 cup vegan chocolate chips
1/3 cup roasted sweetened coconut (optional)
Preheat the oven to 350 and mix the first four ingredients. Fold in coconut and chocolate chips.
I love Trader Joes Roasted Coconut Chips! They add the perfect amount of sweet crunchiness but if you don’t like coconut, the cookies will still be yummy without it!
Roll the dough into about 1 inch balls and place on a greased cookie sheet. Press with a fork and bake for 7 minutes. You don’t want to over cook them because the soft, gooey texture is amazing-and since these are vegan, there is no worry of salmonella!
