Vegan Buffalo Cauliflower (with Vegan Ranch dressing)

I’ve been seeing these yummy looking buffalo cauliflower recipes all over Pinterest and I’ve been wanting to give one a try! However, I really didn’t want to use any dairy products or unnecessary items-which led me to abandoning all recipes and just starting from scratch! I was able to turn out a pretty darn tasty batch of vegan buffalo cauliflower-and just in time for the Super Bowl!! I also made a batch of vegan ranch for dipping (just between you and me, I liked the ranch even better than the cauliflower!).

Vegan Buffalo Cauliflower

Prep time: 45 mins. Servings: 8


1 large head of raw cauliflower
1 cup whole wheat flour
1 tbs. corn starch
1 tsp. garlic powder
1 tsp. seasoning salt
3 tbs. bread crumbs (optional)
1 cup almond milk
2 tbs. Earth Balance
1 1/2 cups buffalo sauce (check ingredients for anchovies-some sauces are sneaky and contain meat and milk!)

Heat oven to 400 degrees. Rinse and chop cauliflower into chunks. Remove any long stalks. In a bowl, mix flour, corn starch, garlic powder, seasoning salt and bread crumbs, until well blended. Pour in almond milk and mix to make a thick batter. Add cauliflower and gently mix by hand until all pieces are well coated.
Place the cauliflower on a baking sheet that is lined with foil and greased. Spread the pieces out the best you can and cook for 15-20 minutes. Check the cauliflower for tenderness by poking it with a fork. If the fork goes in easily, then pull them from the oven.

Melt the Earth Balance and mix with the buffalo sauce. I used this sauce because it only had 6 ingredients, has lowered sodium, and no animal products!
Pour the buffalo and Earth Balance mixture over the baked cauliflower, turning the pieces to coat all sides. Put back in the oven and bake for 10 more minutes. If you want your cauliflower a little crispy on the edges, turn on your ovens broiler for 2 minutes-but be careful to keep a close eye on it! The broiler can burn and ruin dinner in a hot second!

Vegan Ranch

Prep time: 5 mins. Servings: 12-15

5 crisp radishes
2 green onions
1/2 cup cilantro
1 tbs. Dijon mustard
1/2 tsp. garlic powder or 1 clove garlic
1/3 cup almond milk
3 heaping tbs. organic Vegenaise (find in the organic refrigerator section of the grocery store)
Light sprinkle of sea salt and pepper

Place all ingredients in a blender or food processor and blend well. Serve immediately or chill first. It will last a week refrigerated in a sealed container.
