Buffalo Beans and Kale(Over Ranch-Style Slaw)

After the huge success of the buffalo cauliflower, I began thinking of all the things I can buffalo!! And I’ve discovered, I can…buffalo…almost anything(insert maniacal laugh here). So here are some super quick buffalo beans that you will be craving every day for lunch!

Buffalo Beans and Kale(Over Ranch-Style Slaw)

Prep time: 10 mins. Servings: 2

Ingredients:

2 cups beans (I used great northern)
1 cup raw kale
1/3 cup vegetable broth or water
1/4 cup buffalo sauce
Seasoning salt, sea salt, and pepper to taste
4 cups of raw shredded cabbage or slaw mix
2/3 cup homemade vegan ranch (see my last post for the recipe!)

Pour broth or water into pan and add kale. Cook until soft-about 5 minutes. Add beans, seasoning and buffalo sauce. Turn heat up and cook until bubbling-about 3 minutes.
Place cabbage in a mixing bowl and drizzle with ranch. Stir until all the cabbage is well coated.
Put a layer of slaw in a small bowl and top with beans. There you have it!! Super easy, super quick, and super delicious!! Now if you’ll excuse me, I have to go get another bowl of Buffalo Beans!
