Black Bean Tuna Salad

I’m always looking for fresh and light lunches-that are quick and easy! I was rummaging my pantry the other day and found canned tuna and black beans-it sounded good to me so I threw them together to make a lightning fast and tasty lunch!

Black Bean Tuna Salad

Prep time: 15 mins. Servings:2

Ingredients:

15 oz. white canned tuna in water(3 small cans)
2 cups black beans
3 radishes
2 green onions
1 cup chopped kale
2 kosher dill pickle spears
1/2 cup pickle juice
1/2 cup vegan ranch (Or 2 tbs Vegenaise or mayonnaise)
Sea salt and pepper to taste
4 cups of salad greens

In a mixing bowl, add tuna, chopped radishes, diced green onions, finely chopped kale, and diced pickles. Mix well.
Add ranch, pickle juice, sea salt and pepper. Stir well. Fold in beans gently so as not to mash them. Taste and add more salt and pepper if needed.
Place two cups each of salad greens into two bowls. Spoon tuna salad over top of greens and enjoy!
