I’m always in the mood for sweets. Always. So I often try to find ways to make a sweet treat that I can feel good about and is packed with protein! This is how I literally mashed together this yummy, spongy, banana-chocolatey treat! It’s soft and gooey like a bread pudding but comes in at a lovely 114 calories a serving-and those are nutritious calories so you can enjoy this treat all day long! I am calling it a bread pudding, but don’t be confused, this treat is still gluten and dairy free!
Banana Bread Pudding
Prep time: 70 mins. Servings: 10
Calories: 114 per slice
4 ripe bananas
2 tbs real maple syrup
1/2 cup gluten free rolled oats
1/2 cup cashew meal
Sprinkle of cinnamon
1/2 cup vegan chocolate chips
Preheat oven to 350 and grease a loaf pan. Mash the bananas well in a mixing bowl. Add in syrup and cinnamon. Stir in cashew meal and rolled oats. Let batter sit 5 minutes for the oats to fluff up. Stir in chocolate chips and pour into loaf pan.
Bake in the oven until knife inserted into the middle comes out clean-about 45-60 minutes. The loaf won’t rise much at all and that’s ok! It’s moist and gooey just like a bread pudding!
Slice into 10 slices. Serve crumbled with a few pieces of fresh banana-it’s delicious warm or chilled!
