You know if it’s on my blog that this isn’t just a sweet treat, it’s a dairy free, protein and nutrient packed quick bread! I was inspired to try a healthy version of a cinnamon crumb bread when I glanced at a recipe that popped up online-with over two cups of sugar-agh! I want a treat I can be ok with eating and feel happy about giving it to my kiddos for a snack. So I came up with my own version and we were all pretty happy with it! This mixes up in a couple minutes and smells heavenly while baking!
Easy Cinnamon Crumb Bread
Prep time: 60 mins. Servings: 16-18
1 1/2 cups spelt flour
1 1/2 cups whole wheat white flour
2 tsp baking soda
1 heaping tbs Earth Balance
1/2 cup organic cold pressed coconut oil
1/4 cup chia seeds
4 tbs vanilla raw protein powder
6 tbs maple syrup
3/4 cup organic brown sugar
2 1/2 cups almond milk
6 tsp cinnamon
Preheat the oven to 350.
Melt Earth Balance and coconut oil and mix with protein powder and 3 tbs of maple syrup. Stir in chia seeds, 1 tbs of cinnamon and the baking soda. Add the almond milk and stir well-I whisked mine a little to get rid of any large clumps. Add both flours and stir until the ingredients are well blended.
Mix 1/2 cup of brown sugar, remaining maple syrup and 4 tsp of cinnamon. Set aside momentarily.
Pour half of the batter into a greased 9×9 pan or into two loaf pans. Drizzle the sugar, syrup, cinnamon mix over the batter and then top with the remaining bread batter. Take a butter knife and sweep lightly from side to side in the batter to create cinnamon swirls in the bread.
Mix 1/4 cup of brown sugar and the last tsp of cinnamon. Sprinkle the mixture on top of the bread.
Bake for 40-45 minutes or until a knife or toothpick, inserted in the center, comes out clean.
Pull from the oven and let the bread rest for 5 minutes. Enjoy warm with Earth Balance and a cup of coffee-yum!!
