Vegan Salted Chocolate Mousse with Fresh Raspberries and Almonds

I think I have a problem. I have a terrible sweet tooth and my last couple posts have been reflecting that! My last sweet treat had a healthy punch, however, other than the fruit, this is mostly just a guilty vegan pleasure! It isn’t overwhelmingly sweet and has a delightful creamy mousse texture with just a hint of sea salt-hmmm I’m licking my lips just remembering it! I actually whipped up this mousse because of some fresh raspberries I found and I was not disappointed by the pairing. Share this dessert with friends or just go and enjoy a summery treat alone as you breathe in the fresh smells of spring!

Vegan Salted Chocolate Mousse with Fresh Raspberries and Almonds

Prep time: 10 mins. Servings: 2


1/2 cup fresh raspberries
2 tbs vegan cream cheese
2 tsp Earth Balance
8 tbs powdered sugar
4 tbs unsweetened cocoa powder
4 tsp almond milk
2 tbs sliced almonds
1/4 tsp finely ground sea salt

Cream Earth Balance, cream cheese and powdered sugar together by hand. Add in cocoa powder. Drizzle almond milk into the mixture and blend on medium with a hand mixer. The mousse will start out dry and crumbly and will begin to whip up as you mix. When the mixture starts to blend, turn to high and whip for 10-15 seconds.
Separate the mousse into two small serving dishes. Sprinkle a pinch of sea salt on top of each dish.
Top each dish with sliced almonds and fresh raspberries. Serve immediately and enjoy!
If you prefer your mousse chilled, place it in the refrigerator for 30 minutes, and then top with almonds and raspberries.
