Spicy Salsa Crackers

I decided to try my hand at a savory snack and I really enjoyed it! I want to keep shaking up this recipe but it was a fun start! These “crackers” are gluten, nut and dairy free! Low in allergen but so high is taste! They are about a medium in spice level if you are sensitive to heat, but if you like it hot, then you will think these are only mild with a little zing. They mix up quickly though and are a fun little snack!

Spicy Salsa Crackers

2 Flax eggs

1 1/2 tablespoons melted Earth Balance or dairy free butter substitute of your choice

4 tablespoons medium salsa

1-1 1/2 teaspoons hot sauce of your choice

1/4 cup nutritional yeast

1/4 cup corn starch

1/4 brown rice flour

1 teaspoon baking powder

1/4 teaspoon sea salt

1/4 teaspoon seasoning salt

1/2 teaspoon cracked black pepper

1/2-1 teaspoon taco seasoning

Preheat oven to 350 degrees. Mix salsa, hot sauce, flax eggs, and 1 tablespoon of EB butter in a medium sized bowl(but save 1/2 tablespoon for later). I like Franks hot sauce but you can use anything you enjoy!

Mix the dry ingredients(everything remaining) in a separate bowl, then add to wet ingredients and mix well until a batter forms.

Line a 9×12 baking pan with parchment paper and spread batter across pan with a spatula. It may be necessary to spray the spatula with cooking spray to keep batter from sticking. Spread it thinly then cut lines in both directions to form squares.

Cook for 15 minutes then remove from oven. Brush the crackers with the remaining butter and sprinkle with taco seasoning. I use gluten free Spice Island taco seasoning-it has the perfect amount of kick!

Bake for an additional 25-30 minutes until edges are crispy and brown. Use a serrated knife to gently separate the crackers.

I felt like they needed a dip so I whipped up some quick creamy salsa!

Creamy Salsa Dip

2 tbs salsa

2 tbs Just Mayo gluten and dairy free mayonnaise

1/2 teaspoon lemon juice

Mix together and enjoy immediately!
